In the data sheet for the XHRA-2HPA it says "The xCORE-AUDIO Hi-Res family of parts offer 2-channel, 5.1 and 7.1 channel USB audio interfaces". Is the 2 channel part the only one which is available?

Yes, I believe only the stereo version that runs on the HPA reference board is currently available
